Berry Ice Cream

I love everything coconut. Coconut milk, water, cream, shredded, flakes, oil, flour. I always have a few tins of coconut cream in the cupboard and I prefer the Ayam brand as it’s 100% natural with no added nasties. So why do I love coconuts? Firstly, it’s delicious, and secondly it’s so good for you! Don’t be deterred by the high fat content, the saturated fat in coconut is made up of short-chain and medium-chain fatty acids the body quickly turns into energy instead of storing as fat. Therefore, even though it’s high in saturated fat, coconut can aid in weight loss. Half the medium-chain fatty acids in coconut milk are composed of lauric acid, which is anti-viral, anti-bacterial, anti-microbial and anti-fungal. Coconut milk can help boost the immune system.

2 cups frozen mixed berries
1 cup coconut cream
Optional 1-2 tbs agave syrup (depending on how sweet you like it)

All in the food processor and whizz until smooth. You can do this with frozen mango or banana instead of the berries. They are delicious too!
