2zucchiniroughly chopped (peeled if you don’t want your soup green)
1red onionchopped
2-3clovesgarlicchopped
2broccoli stalksoptional
1ham hockobviously omit if vegan/vegetarian
2litres bone brothor stock
270mlcoconut creamoptional
Instructions
Add all ingredients to a big pot (or slow cooker) and turn onto low. Add salt and pepper to taste.
Allow to simmer for 2-3 hours (slow cooker can be 5-6hours). Remove ham hock (you can add any meat still on the bone back to the soup if you want to) and discard.
Use a stick blender to blend to smooth. Add more broth if you like a runnier soup.
