Hash Browns

Ingredients

  • 450 g potato (or sweet potato for strict paleo) grated
  • I tsp salt
  • 4 tbs buckwheat (or tapioca flour for paleo)
  • 1 egg
  • 2 tbs fresh herbs I used sage
  • 1/2 cup coconut oil or ghee for cooking
  • OPTIONAL
  • 1/2 cup diced bacon

Instructions

  1. Mix grated potato, flour, salt, herbs and the egg together well in a bowl. 

  2. In a medium frying pan heat your oil over low-need heat until hot. You can use less oil but I wanted to get a super crispy hash brown so decided to shallow fry them. 

  3. Spoon in the potato batter and allow to cook until golden on each side. 

    Makes 8-10 hash browns
