They are LOADED with vitamin E which is an excellent antioxidant, rich in omega 3 fatty acids which provide an excellent anti inflammatory action for our bodies and contains lots of important B-complex vitamins. 1 lge eggplant, chopped roughly
3-4 large ripe tomatoes, chopped roughly
Goats cheese to top
Pinch salt & pepper
1 tsp cinnamon
1 tbs melted coconut oil (or oil of your choice)
This is so easy, almost too easy to even write down. It will probably take you longer to read this than actually prepare is dish. Preheat your oven to 170C. In an ovenproof baking dish add chopped tomatoes & eggplant and toss well with coconut oil, salt, pepper & cinnamon. Spread evenly over the baking dish, top with crumbled goats cheese & walnuts & bake for 20-30 mins until golden.1
