Mango Mojito Sorbet

Summer is here and you know what that means? Mangoes! Hip hip hooray! Summer time fruit is the bestest! Cherries, peaches, nectarines, lychees & man-man-mangoes! They are brilliant in salads, made into a dressing, turned into a dessert and best of all, they go perfectly with my other love, coconut. Heaven! This recipe is quick, easy & can be done even if you don’t have an ice cream maker.

Flesh of 2 lge mangoes
Juice 1 lime
1/4 cup chopped mint
1L of coconut water ( I used RawC)

Add everything to your food processor & blend until smooth. Pop in the fridge to chill. Once cold pour into your ice cream maker & stand by for magic. If you don’t have an ice cream maker I weep for you…. But you can pour the mix into silicone cupcake or ice cube moulds, freeze overnight then re-blitz in the food processor to get a soft-serve version or just pour it into Popsicle moulds.
