Thai Baked Fish

This is a great fresh, healthy, quick and easy way to serve a group of people or just yourself. You can do it in the oven or on the BBQ. Any type of fresh fish would be delicious!

Serves 6

1 kg fresh firm white fish- I used the whole sides of snapper. Fillets would be fine too or a whole fish.
1 cup coconut cream
1 bunch fresh coriander, chopped
1/2 cup mint, chopped
2 red chillies, chopped finely
4 cm piece fresh ginger, grated on a microplane
Juice 2 limes

Preheat oven to 200C. Take some alfoil pieces the length of your fish fillets place 2 layers on the bench on top of each other. Place your fish fillets on top and sprinkle with chilli, ginger, 1/2 coriander, lime juice and coconut cream.

Wrap fish in foil parcel so it is completely sealed. Place on a baking tray and cook for about 20 minutes or until fish easily flakes apart. Open parcel and top with remaining coriander and mint and serve.
